How do I get a roommate off the title to the house? She did not financially contribute to the
purchase of the house and is not on the mortgage.

She can sign a quit claim deed giving you the property. If she refuses, the remedy that is most likely the best option would be a partition sale. A partition sale is a sale authorized by the court when owners of property can not agree. I would suggest talking to a local attorney about this as it is expensive and not always the best alternative.
